Description
A comforting chicken and rice meal bursting with vibrant citrus and savory herbs.
Ingredients
Scale
- 4 boneless chicken breasts
- 1 cup rice (long grain or jasmine)
- 2 cups chicken broth
- 2 lemons (juiced and zested)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In your slow cooker, combine the chicken, rice, chicken broth, lemon juice, lemon zest, chopped onion, minced garlic, oregano, thyme, and a sprinkle of salt and pepper. Stir to mix everything well, ensuring the rice is evenly distributed.
- Cover the slow cooker with a lid and set it to low for 6-7 hours or high for 3-4 hours, until the chicken is fully cooked and the rice is tender.
- After cooking, take the chicken out and shred it using two forks. Return the shredded chicken to the slow cooker, mixing it well with the rice for even flavor distribution.
- Finally, garnish the dish with freshly chopped parsley before serving it warm.
Notes
Using homemade chicken broth enhances the flavor more than store-bought varieties.
