Ingredients

  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/3 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Begin by patting the chicken breasts dry and generously seasoning them with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken for about 3 minutes on each side until golden brown.
  3. Layer the sliced onions and minced garlic at the bottom of your slow cooker.
  4. Carefully place the seared chicken over the onion and garlic layer.
  5. In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme. Pour this mixture over the chicken.
  6. Cook on low for 6-7 hours or on high for 3-4 hours.
  7. Once done, remove the chicken breasts to rest.
  8. Mix cornstarch and water in a small bowl and stir it into the sauce in the slow cooker, cooking for an additional 10-15 minutes on high until thickened.
  9. Serve the chicken drizzled with sauce, garnished with parsley.
