- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons cornstarch
- 2 tablespoons water
- Fresh parsley, chopped (for garnish)
Instructions
- Begin by patting the chicken breasts dry and generously seasoning them with salt, pepper, and smoked paprika.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for about 3 minutes on each side until golden brown.
- Layer the sliced onions and minced garlic at the bottom of your slow cooker.
- Carefully place the seared chicken over the onion and garlic layer.
- In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme. Pour this mixture over the chicken.
- Cook on low for 6-7 hours or on high for 3-4 hours.
- Once done, remove the chicken breasts to rest.
- Mix cornstarch and water in a small bowl and stir it into the sauce in the slow cooker, cooking for an additional 10-15 minutes on high until thickened.
- Serve the chicken drizzled with sauce, garnished with parsley.
