Description
A soul-warming Chicken Gnocchi Soup that combines tender chicken with rich broth and pillowy gnocchi for a comforting meal.

- 1 pound boneless, skinless chicken breasts
- 2 cups chicken broth
- 1 cup heavy cream
- 1 package (16 ounces) gnocchi
- 2 cups fresh spinach
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, minced garlic, carrots, and celery, sautéing until softened (about 4-5 minutes).
- Place the chicken breasts in the pot, pouring in the chicken broth. Bring everything to a boil, then reduce to a simmer. Cook for about 20 minutes until the chicken is tender and cooked through.
- Remove the chicken from the pot and shred it with two forks. Return the shredded chicken back to the pot to mingle with the broth.
- Stir in the heavy cream and gnocchi, along with the Italian seasoning. Gently bring the soup to a boil again, cooking the gnocchi according to package instructions (usually around 2-3 minutes).
- Fold in the spinach and cook just until wilted (approximately 1 minute).
- Season your soup with salt and pepper to taste. Serve piping hot in a cozy bowl.
Notes
For a lighter version, substitute half-and-half or milk for the heavy cream. To make it vegan, swap chicken for firm tofu and use vegetable broth.
