Description

A soul-warming Chicken Gnocchi Soup that combines tender chicken with rich broth and pillowy gnocchi for a comforting meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 package (16 ounces) gnocchi
  • 2 cups fresh spinach
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion, minced garlic, carrots, and celery, sautéing until softened (about 4-5 minutes).
  2. Place the chicken breasts in the pot, pouring in the chicken broth. Bring everything to a boil, then reduce to a simmer. Cook for about 20 minutes until the chicken is tender and cooked through.
  3. Remove the chicken from the pot and shred it with two forks. Return the shredded chicken back to the pot to mingle with the broth.
  4. Stir in the heavy cream and gnocchi, along with the Italian seasoning. Gently bring the soup to a boil again, cooking the gnocchi according to package instructions (usually around 2-3 minutes).
  5. Fold in the spinach and cook just until wilted (approximately 1 minute).
  6. Season your soup with salt and pepper to taste. Serve piping hot in a cozy bowl.

Notes

For a lighter version, substitute half-and-half or milk for the heavy cream. To make it vegan, swap chicken for firm tofu and use vegetable broth.
