Fluffy, golden waffles made with sourdough discard, perfect for a delightful breakfast or brunch.

Ingredients

Scale
  • 1 cup sourdough discard
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions until it’s hot and ready.
  2. In a mixing bowl, whisk together the sourdough discard, all-purpose flour, sugar, baking powder, baking soda, and salt until combined.
  3. In another bowl, beat the egg and mix in the milk, melted butter (or oil), and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients, gently folding until just combined.
  5. Lightly grease the waffle iron if necessary and pour an appropriate amount of batter into the hot iron.
  6. Close the waffle iron and cook until golden brown and crispy, following the manufacturer’s guidelines.
  7. Serve immediately while warm, inviting everyone to add their favorite toppings.

Notes

For fluffy waffles, let the batter rest for a few minutes before cooking.
