- 1 lb lean chicken breasts
- 1 cup rice
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 cup cream
- Salt and pepper to taste

Instructions
- In a large pot, add the chicken breasts and pour in the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes until the chicken is fully cooked.
- Remove the chicken from the pot and allow to cool slightly. Shred the chicken into bite-sized pieces.
- In the same pot, add the diced onion, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables are soft.
- Stir in the rice and add the shredded chicken back to the pot, mixing well to distribute flavors.
- Pour in the cream, then season with salt and pepper. Simmer for another 10-15 minutes until the rice is tender.
- Serve hot, garnished with fresh herbs if desired.
