- 1 tablespoon tomato paste
- 1 tablespoon Italian seasoning
- 1/2 teaspoon red chili flakes
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt, more to taste
- 3 cups chopped kale or baby spinach
- 2 tablespoons lemon juice
- Optional: shredded Parmesan cheese for serving
Instructions
- In a large pot, heat the olive oil over medium heat until it shimmers.
- Add the finely chopped onions, minced garlic, sliced carrots, and chopped celery. Sauté for 4–5 minutes until the onions are translucent and fragrant.
- Stir in the drained cannellini beans along with the vegetable broth, tomato paste, Italian seasoning, red chili flakes, black pepper, and salt. Mix thoroughly to combine all ingredients.
- Raise the heat to bring the mixture to a boil, then lower to a simmer uncovered for about 15 minutes to let the flavors meld beautifully.
- For a creamier texture, transfer 2 cups of the soup to a blender and blend until smooth. Return the blended soup to the pot or use an immersion blender for desired consistency.
- Stir in your choice of chopped kale or spinach and let it simmer for an additional few minutes until the greens have wilted.
- Finish with a splash of fresh lemon juice and adjust seasoning according to taste.
- Serve piping hot, garnished with crusty bread and an optional sprinkle of Parmesan cheese for extra richness.
