Description

A heartwarming dish of chicken and potatoes seasoned with garlic and Parmesan, perfect for a comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons olive oil

Instructions

  1. Wash the baby potatoes thoroughly and cut them in half.
  2. Rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
  3. Place the halved potatoes at the bottom of the crockpot.
  4. Lay the seasoned chicken on top of the potatoes.
  5. Pour the chicken broth over the chicken and potatoes.
  6. Sprinkle minced garlic and top with grated Parmesan cheese.
  7. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  8. Remove chicken and potatoes from the crockpot, serving with remaining sauce.

Notes

For crispier potatoes, uncover the crockpot for the last 30 minutes of cooking. Leftover sauce is great as a drizzle.
