- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1/2 medium onion, chopped
- 2 cups crushed Doritos (Nacho Cheese flavor recommended)
- 1 can black beans (14 ounces, drained and rinsed)
- 1 can corn (12 ounces, drained)
- 1 jar salsa (15.5 ounces)
- 2 cups shredded Mexican cheese blend
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium-high heat, add olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spatula.
- Stir in the chopped onion and cook until the onions soften.
- Grease a 9×13 casserole dish and layer the crushed Doritos evenly at the bottom.
- Combine black beans, corn, salsa, and half of the cheese with the beef mixture in the skillet; warm thoroughly.
- Pour the beef mixture over the layer of Doritos and top with the remaining cheese.
- Bake in the oven for 15 to 20 minutes until golden and bubbling.
- Let the casserole sit for five minutes before serving.
Notes
Customize with toppings such as sour cream or guacamole. You can also easily make this dish vegan by swapping beef for lentils and cheese for a plant-based option.
