Ingredients

- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup cooked rice
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, 1 cup of shredded cheese, cooked rice, chili powder, cumin, salt, and pepper. Stir everything together until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
- Sprinkle the remaining cup of cheese on top. Optionally add tortilla chips for crunch.
- Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
- Allow the casserole to cool slightly before serving.
Notes
For added flavor, finish with fresh cilantro or scallions before serving. Leftovers are great for lunch the next day.
