Description

A comforting Mexican chicken casserole filled with vibrant flavors, perfect for family gatherings or busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked rice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, 1 cup of shredded cheese, cooked rice, chili powder, cumin, salt, and pepper. Stir everything together until well combined.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread it evenly.
  4. Sprinkle the remaining cup of cheese on top. Optionally add tortilla chips for crunch.
  5. Bake in the preheated oven for 30 minutes, or until the cheese is melted and bubbly.
  6. Allow the casserole to cool slightly before serving.

Notes

For added flavor, finish with fresh cilantro or scallions before serving. Leftovers are great for lunch the next day.
