Description

A comforting chicken casserole combining tender chicken, creamy tzatziki, and fresh veggies, perfect for any occasion.


Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked white rice
  • 2 cups chicken broth
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup grape tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup Greek-style tzatziki sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Spread the uncooked rice evenly across the bottom of the baking dish.
  3. Pour the chicken broth over the rice.
  4. Layer the shredded chicken, diced cucumber, chopped red onion, halved grape tomatoes, and sliced Kalamata olives over the rice.
  5. In a medium bowl, mix the tzatziki sauce with garlic powder, oregano, salt, and pepper; spread it over the chicken and vegetables.
  6. Sprinkle crumbled feta cheese on top.
  7. Cover the dish with aluminum foil and bake for about 45 minutes.
  8. Remove the foil and bake for an additional 10 minutes until the feta is golden.
  9. Allow to cool slightly before garnishing with fresh parsley.

Notes

For a vegan version, substitute chicken with sautéed vegetables and use chickpeas with coconut or soy yogurt for tzatziki.
