- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 tbsp cornstarch
- 2 tbsp water
- 1 tbsp olive oil (optional, for searing)
- 1/4 tsp dried thyme (optional)
- Fresh parsley (chopped, for garnish)
Instructions
- Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and paprika.
- (Optional) Heat olive oil in a skillet over medium heat. Sear the seasoned chicken for 2-3 minutes on each side until lightly browned.
- Transfer the chicken to the crockpot, laying it down evenly.
- In a separate bowl, whisk together chicken broth, cream of chicken soup, and dried thyme; pour over the chicken.
- Cover and cook on low for 6 hours or high for 3 hours.
- In the last 30 minutes, mix cornstarch with water to form a slurry, then stir it into the crockpot.
- Once done, shred the chicken or serve whole, garnished with parsley.
Notes
Consider using boneless thighs for a juicier option. Add veggies in the last hour for a one-pot meal.
