Ingredients

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp olive oil (optional, for searing)
  • 1/4 tsp dried thyme (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Season the chicken breasts evenly with salt, black pepper, garlic powder, onion powder, and paprika.
  2. (Optional) Heat olive oil in a skillet over medium heat. Sear the seasoned chicken for 2-3 minutes on each side until lightly browned.
  3. Transfer the chicken to the crockpot, laying it down evenly.
  4. In a separate bowl, whisk together chicken broth, cream of chicken soup, and dried thyme; pour over the chicken.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. In the last 30 minutes, mix cornstarch with water to form a slurry, then stir it into the crockpot.
  7. Once done, shred the chicken or serve whole, garnished with parsley.

Notes

Consider using boneless thighs for a juicier option. Add veggies in the last hour for a one-pot meal.
