- 2 lbs chicken thighs (boneless, skinless)
- 1 cup chicken broth
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Rinse the chicken thighs and pat them dry. Season generously with salt, pepper, thyme, and paprika.
- In a skillet over medium heat, add a splash of oil and sauté the diced onion for about 3-4 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
- In your crock pot, place the seasoned chicken thighs and layer with the sautéed onion and garlic.
- Pour in the chicken broth and top with mixed vegetables.
- Cover and cook on low for 6-8 hours or high for about 3-4 hours, until chicken is fork-tender.
- Once cooking is complete, shred the chicken in the pot using two forks and serve hot with garnished fresh parsley.
Notes
For best results, choose fresh vegetables and organic chicken. Adding a splash more broth halfway through cooking will keep the chicken moist.
