  • 2 cups chicken broth

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 ½ cups whole milk
  • ½ cup chicken broth
  • ½ teaspoon garlic powder
  • ¼ teaspoon thyme
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley (chopped, for garnish)

Instructions

  1. In a bowl, combine garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub the mixture generously over each chicken breast.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 4-5 minutes on each side until golden brown. Remove chicken from skillet and set aside.
  3. In a saucepan, bring chicken broth and salt to a boil. Stir in the rice, lower the heat, cover, and simmer for 15-18 minutes until the rice is tender. Fluff with a fork before serving.
  4. In the same skillet used for the chicken, melt butter over medium heat. Sprinkle in flour and cook for 1-2 minutes, stirring to avoid burning. Gradually whisk in milk and chicken broth, and stir in garlic powder and thyme. Add cheddar and Parmesan, mixing until the sauce thickens.
  5. Return the chicken to the skillet, spoon the creamy sauce over it, cover, and let simmer on low for an additional 10 minutes to allow flavors to meld.
  6. Spoon the creamy chicken over the fluffy rice and garnish with chopped parsley. Enjoy the warmth of this dish!
