Ingredients

  • 8 oz penne or fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente, drain, and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about a minute, just until fragrant but not browned.
  3. Pour in the heavy cream and chicken broth, stirring well to combine. Let the mixture simmer gently for about five minutes until it thickens slightly.
  4. Stir in the shredded rotisserie chicken and fresh spinach, letting the spinach wilt and the chicken heat through.
  5. Add the cooked pasta to the skillet, using tongs to toss the pasta until it is well coated in the creamy sauce. Season with salt and pepper to taste.
  6. Serve immediately, garnished with freshly grated Parmesan cheese.
