- 8 oz penne or fettuccine pasta
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced

- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente, drain, and set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about a minute, just until fragrant but not browned.
- Pour in the heavy cream and chicken broth, stirring well to combine. Let the mixture simmer gently for about five minutes until it thickens slightly.
- Stir in the shredded rotisserie chicken and fresh spinach, letting the spinach wilt and the chicken heat through.
- Add the cooked pasta to the skillet, using tongs to toss the pasta until it is well coated in the creamy sauce. Season with salt and pepper to taste.
- Serve immediately, garnished with freshly grated Parmesan cheese.
Notes
Adjust the thickness of the sauce by simmering longer or adding more cream. Feel free to customize with your favorite vegetables.
