Ingredients

- 4 boneless skinless chicken breasts
- 4 Russet potatoes, cut into 2-inch pieces
- 2 cups baby carrots
- 1 packet dry ranch dressing mix
- 1 can cream of chicken soup (10 oz)
- 1 cup milk
Instructions
- In a mixing bowl, whisk together the cream of chicken soup, milk, and ranch dressing mix until smooth.
- Layer the chicken breasts at the bottom of the slow cooker.
- Add the cut potatoes and baby carrots on top of the chicken.
- Pour the prepared ranch sauce over the chicken and vegetables.
- Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
- Serve warm, drizzled with additional sauce if desired.
Notes
For a vegan version, substitute chicken with chickpeas or tofu and use vegan cream of mushroom soup.
