- 5 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
- 8 oz (225g) cream cheese, softened
- 1 cup (240ml) sour cream, full-fat
- 1 cup (240ml) chicken broth, low sodium
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- Salt to taste (about 1/2 teaspoon)
- Black pepper to taste (about 1/4 teaspoon)
- 1 tablespoon olive oil or butter (optional, for searing)
- A handful of fresh parsley, chopped (for garnish)
Instructions
- Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, onion powder, and garlic powder.
- For added flavor, heat olive oil or butter in a skillet over medium-high heat, and sear the chicken for 2-3 minutes on each side until golden brown (this step is optional).
- In a medium mixing bowl, combine cream cheese, sour cream, and chicken broth. Whisk until smooth, then stir in thyme, and adjust seasoning with salt and pepper.
- Place the seasoned chicken in the slow cooker and pour the creamy mixture over the top.
- Cook on low for 240-300 minutes, or on high for 120-180 minutes, until the chicken is tender and reaches an internal temperature of 165°F.
- Shred the chicken using two forks in the sauce, or serve it whole, mixing the sauce with the chicken juices for ultimate flavor.
- Before serving, sprinkle chopped parsley over the top for a pop of color and freshness.
Notes
For a thicker sauce, remove the lid during the last hour of cooking to let some of the liquid evaporate. Leftover chicken makes excellent sandwiches or wraps for lunch the next day.
