Description

A comforting chicken dish featuring tender chicken breasts smothered in a creamy sauce, perfect for busy nights or cozy gatherings.


Ingredients

  • 5 boneless, skinless chicken breasts (about 1.5 lbs / 700g)
  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) sour cream, full-fat
  • 1 cup (240ml) chicken broth, low sodium
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt to taste (about 1/2 teaspoon)
  • Black pepper to taste (about 1/4 teaspoon)
  • 1 tablespoon olive oil or butter (optional, for searing)
  • A handful of fresh parsley, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, onion powder, and garlic powder.
  2. For added flavor, heat olive oil or butter in a skillet over medium-high heat, and sear the chicken for 2-3 minutes on each side until golden brown (this step is optional).
  3. In a medium mixing bowl, combine cream cheese, sour cream, and chicken broth. Whisk until smooth, then stir in thyme, and adjust seasoning with salt and pepper.
  4. Place the seasoned chicken in the slow cooker and pour the creamy mixture over the top.
  5. Cook on low for 240-300 minutes, or on high for 120-180 minutes, until the chicken is tender and reaches an internal temperature of 165°F.
  6. Shred the chicken using two forks in the sauce, or serve it whole, mixing the sauce with the chicken juices for ultimate flavor.
  7. Before serving, sprinkle chopped parsley over the top for a pop of color and freshness.

Notes

For a thicker sauce, remove the lid during the last hour of cooking to let some of the liquid evaporate. Leftover chicken makes excellent sandwiches or wraps for lunch the next day.
