Ingredients

  • 1 tsp olive oil
  • 12 oz Italian-style chicken sausages, sliced
  • 1 cup diced onion
  • ½ tsp salt
  • 2 tsp minced garlic
  • ½ tsp crushed red pepper (optional)
  • 4 cups chicken broth
  • 8 oz Radiatore pasta (or any small pasta)
  • 2 cups chopped zucchini
  • 2 tbsp lemon juice
  • 1½ cups grated Parmesan cheese, divided
  • 1 cup halved grape tomatoes
  • 1/3 cup chopped fresh basil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage along with the diced onion. Cook until the sausage is browned and the onion is softened, about 5–7 minutes.
  2. Stir in the minced garlic, salt, and crushed red pepper flakes if you’re using them. Cook for about 1 minute until fragrant, stirring to prevent burning.
  3. Pour in the chicken broth while scraping the bottom of the pan to release those tasty brown bits. Add the pasta and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally.
  4. Gently stir in the chopped zucchini and continue to cook for an additional 5 minutes or until the pasta is tender and the zucchini is cooked through.
  5. Remove from heat, then add the lemon juice, 1 cup of grated Parmesan cheese, halved grape tomatoes, and chopped basil. Stir gently to combine all ingredients evenly.
  6. Top with the remaining Parmesan cheese and serve warm with friends and family.
