Description

A comforting chicken fajita soup that combines juicy chicken, colorful peppers, and spices for a warm, inviting meal.

Ingredients

Scale
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 can black beans, rinsed and drained
  • 2 tbsp fajita seasoning
  • Salt and pepper to taste
  • Lime wedges for serving
  • Fresh cilantro for garnish

Instructions

  1. In a large pot over medium heat, add a splash of oil. Sauté the diced onions and minced garlic until fragrant and translucent, about 3-4 minutes.
  2. Toss in the sliced bell pepper and stir for another 2-3 minutes until it softens and begins to caramelize.
  3. Add the diced chicken breast to the pot, cooking until it turns golden brown and is no longer pink in the center.
  4. Sprinkle in the fajita seasoning, stirring to coat the chicken and vegetables thoroughly.
  5. Pour in the chicken broth, diced tomatoes, and black beans, mixing everything together until evenly combined.
  6. Bring the mixture to a hearty boil before reducing the heat. Allow it to simmer for about 20 minutes, letting all the flavors meld beautifully.
  7. Taste and adjust with salt and pepper to your liking, adding just enough to elevate the flavors without overpowering them.
  8. Serve hot, garnished with fresh lime wedges and a sprinkle of chopped cilantro.

Notes

Store in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat with additional broth if needed.
