- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 2 cups broccoli florets
- 1 can (10.5 oz) cream of chicken soup
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Place the chicken breasts at the bottom of your crockpot, laying them flat for optimal cooking.
- Sprinkle the long-grain white rice evenly around the chicken.
- Pour in the chicken broth, then add the heavy cream and cream of chicken soup.
- Sprinkle the garlic powder, onion powder, salt, and black pepper over the top. Mix gently without disturbing the rice too much.
- Cover your crockpot and cook on LOW for 4-5 hours.
- Once done, carefully remove the chicken breasts and shred them with two forks, returning the shredded chicken back to the pot.
- Fold in the broccoli florets and shredded cheese, then cover and cook for an additional 30 minutes.
- Serve warm, garnished with fresh herbs if desired.
Notes
For a crispy top, you can transfer to an oven-safe dish and broil for a few minutes after cooking.
