Description
Cowboy Corn Dip is a creamy, cheesy, and smoky appetizer filled with sweet corn, crispy bacon, jalapeño, and black beans. This easy dip comes together in minutes and is perfect for parties, game day, or summer BBQs.
Ingredients
- 2 cans (15.25 ounces each) whole kernel corn, drained
- 1 can (15 ounces) black beans, rinsed and drained
- 1/2 cup (116 g) mayonnaise
- 4 ounces cream cheese, softened
- 1 cup (113 g) mild cheddar cheese, shredded
- 1 cup (113 g) mozzarella cheese, shredded
- 1/2 cup (50 g) Parmesan cheese, grated
- 1 large jalapeño, seeded and finely diced
- 8 slices thick-cut bacon, cooked and crumbled
- 1 medium red onion, finely diced (about 1/2 cup)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Green onion, chopped for garnish
Instructions
1. In a large bowl, combine corn, black beans, mayonnaise, and softened cream cheese. Mix until creamy and well blended.
2. Add shredded cheddar, mozzarella, and Parmesan cheese. Stir until evenly combined.
3. Add jalapeño, cooked bacon, and diced red onion. Season with salt and pepper. Mix again until everything is coated.
4. Top with chopped green onion for garnish. Serve immediately with tortilla chips, crackers, or fresh vegetables for dipping.
Notes
Soften cream cheese for smooth blending. Drain corn and beans well to avoid excess liquid. For a hot version, bake at 375°F for 15 minutes until bubbly. Chill for an hour before serving if you prefer a cold dip.
