- 1 pound country sausage
- 2 cups potatoes, diced
- 1 cup corn, frozen or fresh
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 2 teaspoons garlic powder
- 2 teaspoons Italian seasoning
Instructions
- In an Instant Pot or slow cooker, brown the country sausage over medium-high heat until fully cooked and crumbled.
- Add the chopped onion, carrots, and celery; cook until the vegetables are soft, around 5-7 minutes.
- Stir in the diced potatoes, corn, garlic powder, Italian seasoning, and broth. Mix well to combine all the ingredients.
- If using an Instant Pot, seal the lid and cook on high for 10 minutes. If using a slow cooker, set to low and let it cook for 6-8 hours.
- Once cooked, stir in the heavy cream and season with salt and pepper to taste. Serve hot.
Notes
Brown the sausage well for enhanced flavor. Don’t rush the vegetable sautéing to unlock natural sweetness.
