- 4 boneless, skinless chicken breasts
- 1 cup cottage cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- Fresh basil, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt, pepper, garlic powder, and oregano.
- In a large skillet, heat olive oil over medium heat and sear the chicken for 4-5 minutes on each side, until golden brown.
- Spread cottage cheese on top of each chicken breast.
- Spoon marinara sauce over the cottage cheese, then sprinkle mozzarella and Parmesan on top.
- Transfer to a baking dish and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Let sit for a few minutes, then garnish with fresh basil before serving.
Notes
Use freshly grated mozzarella for better melting and consider substituting chicken with chickpeas for a vegan option.
