A wholesome twist on classic chicken parm with creamy cottage cheese and robust marinara sauce, creating a comforting and heartwarming dish.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt, pepper, garlic powder, and oregano.
  3. In a large skillet, heat olive oil over medium heat and sear the chicken for 4-5 minutes on each side, until golden brown.
  4. Spread cottage cheese on top of each chicken breast.
  5. Spoon marinara sauce over the cottage cheese, then sprinkle mozzarella and Parmesan on top.
  6. Transfer to a baking dish and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Let sit for a few minutes, then garnish with fresh basil before serving.

Notes

Use freshly grated mozzarella for better melting and consider substituting chicken with chickpeas for a vegan option.
