Description
A cozy and comforting chicken dish infused with savory spices and fresh vegetables, perfect for busy weeknights or family gatherings.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 2 cups of vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup chopped vegetables (carrots, bell peppers, or your choice)
- Fresh herbs for garnish (parsley or cilantro)
Instructions
- Season the chicken breasts generously with salt, pepper, garlic powder, and paprika on both sides.
- Heat olive oil in a large skillet over medium heat, then sear the chicken for 5-6 minutes on each side until golden brown.
- Pour in the vegetable broth and allow the chicken to simmer gently for 10 minutes.
- Add the chopped vegetables to the skillet and continue cooking for an additional 10-15 minutes until the chicken reaches an internal temperature of 165°F.
- Remove from heat and let the chicken rest for a few minutes. Serve warm, garnished with freshly chopped herbs.
Notes
For extra juiciness, consider marinating the chicken in spices a few hours before cooking. Ensure not to overcrowd the skillet for a good sear.
