Description
Juicy cilantro-lime shrimp, creamy slaw, and buttery avocado all tucked into warm tortillas. Ready in 30 minutes!
Ingredients
- 1 lb wild-caught shrimp, peeled and deveined
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp chili powder
- 1 tbsp olive oil
- 2 tbsp butter
- 1 tsp lime zest (from 1 lime)
- 2 tbsp lime juice (from the same lime)
- 2 tbsp honey
- 1/2 bunch cilantro, finely chopped
- 3 cups finely shredded green cabbage
- 1/2 bunch cilantro, finely chopped
- 1/2 cup Greek yogurt
- 2 tbsp lime juice (from 1 whole lime)
- 1 avocado, sliced
- 8 6-inch tortillas (corn or flour)
- Extra lime wedges, for serving
Instructions
1. Pat shrimp dry with paper towels.
2. Toss shrimp with salt, pepper, paprika, garlic powder, and chili powder.
3. Heat olive oil in skillet over medium-high and cook shrimp for 90 seconds per side.
4. Reduce heat, add butter, lime zest and juice, and honey. Simmer 2–3 minutes until thickened.
5. Stir in chopped cilantro and remove from heat.
6. Combine cabbage, cilantro, yogurt, lime juice, and salt to make slaw.
7. Warm tortillas. Fill with slaw, shrimp, avocado, and drizzle of sauce.
8. Squeeze lime over tacos and serve!
Notes
Store shrimp and slaw separately for freshness.
Slightly char tortillas over open flame for added flavor.
Add sliced jalapeños for a spicier kick.
