Description
These chocolate chip banana bars are moist, buttery, and chewy—like banana bread and blondies in one! Perfect for breakfast, snacks, or dessert.
Ingredients
- ½ cup (113 g) unsalted butter
- 1 cup (120 g) all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ¾ cup (150 g) light brown sugar
- 1 large egg, room temperature
- 1 cup mashed bananas (about 2 medium bananas)
- 2 teaspoons (10 ml) vanilla extract
- ¾ cup (128 g) mini chocolate chips, divided
Instructions
1. Preheat oven to 350°F (177°C). Line an 8×8-inch pan with parchment paper.
2. Melt the butter in a microwave-safe bowl for 1 minute. Let cool 10–15 minutes.
3. In a medium bowl, whisk flour, baking powder, and salt.
4. In a large bowl, whisk melted butter and brown sugar. Add egg, bananas, and vanilla.
5. Stir in dry ingredients in two batches, mixing just until combined.
6. Fold in most of the chocolate chips, reserving some for the top.
7. Spread batter in the pan. Sprinkle with reserved chips.
8. Bake for 30–35 minutes until golden and a toothpick comes out with moist crumbs.
9. Cool completely, lift with parchment, slice, and serve.
Notes
Use ripe bananas with lots of brown spots for best flavor.
Cool melted butter before mixing to avoid scrambling the egg.
Store in an airtight container at room temp for 3–4 days or freeze up to 1 month.
