- 2 boneless, skinless chicken breasts
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup fresh vegetables (shredded lettuce, diced tomatoes, sliced bell peppers)
- ½ cup chipotle ranch dressing
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Season chicken breasts with smoked paprika, cumin, garlic powder, salt, and pepper. Grill on medium-high heat for about 6-7 minutes on each side until cooked. Slice into strips.
- Assemble the Burrito: Lay a tortilla flat, spoon in cooked rice, add black beans, grilled chicken strips, and fresh vegetables. Drizzle with chipotle ranch dressing.
- Roll It Up: Fold sides of the tortilla inward, then roll from the bottom up, keeping it tight.
- Serve & Enjoy: Place burrito seam-side down, slice in half, and serve with extra chipotle ranch dressing on the side.
