Description

This Chinese Beef and Broccoli stir fry is a healthier, homemade version of your favorite takeout—juicy beef, crisp broccoli, and a rich brown sauce in just 30 minutes.


Ingredients

Scale
  • 1 lb flank steak, skirt steak, or other cut
  • 1 tbsp soy sauce
  • 1 tbsp peanut oil (or vegetable oil)
  • 1 tbsp cornstarch
  • 1/2 tsp baking soda (optional)
  • 1/2 cup chicken stock (or beef stock)
  • 2 tbsp Shaoxing wine (or dry sherry)
  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce (optional)
  • 2 tsp brown sugar (or white sugar)
  • 1 tbsp cornstarch
  • 1 head broccoli, cut to bite-size florets
  • 1 tbsp peanut oil (or vegetable oil)
  • 3 garlic cloves, minced
  • 2 tsp ginger, minced

Instructions

1. Slice beef against the grain into thin slices or sticks and marinate with soy sauce, oil, cornstarch, and optional baking soda for 10 minutes.

2. Mix all sauce ingredients in a bowl until smooth.

3. Steam broccoli in 1/4 cup water for 1 minute; set aside.

4. Heat oil in pan, sear beef in a single layer for 30 seconds, flip and cook until just pink.

5. Add garlic and ginger; stir to release aroma.

6. Return broccoli to pan, stir sauce again, and pour in.

7. Stir-fry until sauce thickens, about 1 minute. Serve hot.

Notes

Slice meat thinly against the grain for tenderness.

Stir the sauce again before adding it to prevent clumps.

Use toasted sesame oil at the end for a flavor boost if not using peanut oil.

Dark soy sauce adds depth and color but is optional.
