Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the cubed chicken and season with salt and pepper. Cook for about 5-7 minutes or until browned.
- Introduce the diced sweet potatoes to the skillet, along with chili powder and cumin, stirring to coat.
- Cover and reduce heat to medium-low, cooking for 15-20 minutes until sweet potatoes are fork-tender.
- Squeeze fresh lime juice over the skillet and toss gently. Garnish with chopped cilantro.
- Serve hot with a dollop of yogurt and extra lime juice if desired.
