- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups mushrooms, sliced (button or cremini)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon flour (optional, for thickening)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper and sear them for 6-7 minutes on each side until golden brown. Remove the chicken and set aside.
- Add a touch more olive oil if necessary, then add the chopped onion and minced garlic. Cook for 2-3 minutes until softened and fragrant.
- Add the sliced mushrooms to the skillet and sauté for an additional 5-7 minutes until they release their water and turn golden brown.
- If a thicker gravy is desired, sprinkle the flour over the mushrooms, stir to combine, and gradually pour in the chicken broth, stirring to avoid lumps. Bring to a simmer and cook for 5 minutes to thicken.
- Stir in the heavy cream and dried thyme, then continue cooking for another 3-5 minutes, adjusting seasoning with salt and pepper.
- Return the cooked chicken to the skillet, spoon the mushroom gravy over it, and heat through for an additional 3-4 minutes.
- Serve hot, garnished with freshly chopped parsley, if desired.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut cream. Serve over rice, pasta, or mashed potatoes.
