Ingredients

  • 2 large boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups fresh spinach
  • 8 ounces cream cheese, softened
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F and prepare a baking dish.
  2. Pat chicken dry and season with Italian seasoning, salt, and pepper. Slice into thinner cutlets if desired.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and cook for 30 seconds, then add spinach and sauté until wilted. Remove excess moisture from the spinach.
  4. In a bowl, soften cream cheese and fold in half of the shredded mozzarella, Parmesan, sautéed spinach, and remaining seasoning. Mix until smooth.
  5. Sear the chicken in the remaining olive oil for 1-2 minutes on each side (optional).
  6. Layer the chicken in the baking dish and spread the cream cheese mixture on top, sprinkling the remaining mozzarella over it.
  7. Bake for 20-25 minutes, or until the chicken reaches 165°F and the top is golden.
  8. Let the casserole rest for 5 minutes before serving.
  9. Serve warm, spooning any melted juices over slices for extra richness.

Notes

Use a meat thermometer to avoid overcooking the chicken. Squeeze excess moisture from spinach to prevent a watery filling.
