- 2 large boneless, skinless chicken breasts
- 2 tablespoons olive oil, divided
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups fresh spinach
- 8 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F and prepare a baking dish.
- Pat chicken dry and season with Italian seasoning, salt, and pepper. Slice into thinner cutlets if desired.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and cook for 30 seconds, then add spinach and sauté until wilted. Remove excess moisture from the spinach.
- In a bowl, soften cream cheese and fold in half of the shredded mozzarella, Parmesan, sautéed spinach, and remaining seasoning. Mix until smooth.
- Sear the chicken in the remaining olive oil for 1-2 minutes on each side (optional).
- Layer the chicken in the baking dish and spread the cream cheese mixture on top, sprinkling the remaining mozzarella over it.
- Bake for 20-25 minutes, or until the chicken reaches 165°F and the top is golden.
- Let the casserole rest for 5 minutes before serving.
- Serve warm, spooning any melted juices over slices for extra richness.
Notes
Use a meat thermometer to avoid overcooking the chicken. Squeeze excess moisture from spinach to prevent a watery filling.
