- 1 onion, halved
- 1 piece ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 4 cloves
- 1 tablespoon fish sauce
- 8 cups water
- 8 oz rice noodles
- Fresh herbs (basil, cilantro, mint)
- Bean sprouts
- Lime wedges
- Sliced jalapeƱos
- Salt to taste
Instructions
- In a large pot, combine the chicken, onion, ginger, star anise, cinnamon stick, cloves, fish sauce, and water. Bring to a boil and then reduce it to a simmer, skimming any foam that rises.
- Allow to cook for about 30-45 minutes until the chicken is tender.
- Remove the chicken from the pot and let it cool slightly before shredding the meat. Strain the broth to remove solids.
- While the broth simmers and the chicken cools, cook the rice noodles according to the package instructions.
- In serving bowls, place a portion of cooked rice noodles, shredded chicken, and pour the hot broth over them.
- Adorn each bowl with fresh herbs, bean sprouts, lime wedges, and sliced jalapeƱos for personal customization.
