Ingredients

  • 8 cups water
  • 8 oz rice noodles
  • Fresh herbs (basil, cilantro, mint)
  • Bean sprouts
  • Lime wedges
  • Sliced jalapeƱos
  • Salt to taste

Instructions

  1. In a large pot, combine the chicken, onion, ginger, star anise, cinnamon stick, cloves, fish sauce, and water. Bring to a boil and then reduce it to a simmer, skimming any foam that rises.
  2. Allow to cook for about 30-45 minutes until the chicken is tender.
  3. Remove the chicken from the pot and let it cool slightly before shredding the meat. Strain the broth to remove solids.
  4. While the broth simmers and the chicken cools, cook the rice noodles according to the package instructions.
  5. In serving bowls, place a portion of cooked rice noodles, shredded chicken, and pour the hot broth over them.
  6. Adorn each bowl with fresh herbs, bean sprouts, lime wedges, and sliced jalapeƱos for personal customization.
