- 2 cups cooked shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 cup cooked brown rice
- 2 cups shredded cheese (cheddar or Mexican blend)
- Taco seasoning to taste
- Salt and pepper to taste
- Tortilla chips for topping (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cooked rice, half of the cheese, taco seasoning, salt, and pepper. Mix gently until well blended.
- Pour the mixture into a greased casserole dish, spreading it evenly.
- Top with the remaining cheese and optional sour cream and tortilla chips.
- Bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
For extra flavor, add a sprinkle of lime juice before serving. Can be prepared in advance and frozen.
