Description

A flavorful Chicken Burrito Casserole that combines shredded chicken, black beans, corn, salsa, and cheese for a delicious one-dish meal.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 cup cooked brown rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Taco seasoning to taste
  • Salt and pepper to taste
  • Tortilla chips for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, cooked rice, half of the cheese, taco seasoning, salt, and pepper. Mix gently until well blended.
  3. Pour the mixture into a greased casserole dish, spreading it evenly.
  4. Top with the remaining cheese and optional sour cream and tortilla chips.
  5. Bake for 30-35 minutes, or until the cheese is bubbly and golden.
  6. Let cool for a few minutes before serving.

Notes

For extra flavor, add a sprinkle of lime juice before serving. Can be prepared in advance and frozen.
