- 2 slices of bread
- 1 cup cooked chicken, shredded
- 1 ripe avocado, mashed
- 1 cup shredded cheese (cheddar or mozzarella)
- Salt and pepper to taste
- Butter for spreading
Instructions
- Spread butter on one side of each slice of bread.
- On the unbuttered side of one slice, layer shredded chicken and mashed avocado. Season with salt and pepper.
- Sprinkle shredded cheese on top of the avocado.
- Place the second slice of bread on top, buttered side facing up.
- Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes on each side until golden brown and cheese is melted.
- Slice the sandwich in half and serve while hot.
Notes
To prevent bread from burning, lower the heat if the cheese isn’t melting in time. For added flavor, consider sprinkling herbs or garlic powder on the avocado.
