Description

A comforting and flavorful cheesy taco pasta dish that combines the zestiness of taco seasoning with creamy cheese, perfect for busy weeknights and family gatherings.


Ingredients

  • 8 oz pasta (elbow or rotini)
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 bell pepper, diced
  • 1 cup corn (fresh or frozen)
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish
  • Salt and pepper to taste
  • 2 cups water or broth

Instructions

  1. In a large skillet over medium heat, add the ground beef. Brown it, draining any excess fat.
  2. Stir in the taco seasoning, diced bell pepper, corn, black beans, and 2 cups of water or broth. Bring to a boil.
  3. Add in the pasta, stirring to combine. Cover and simmer for 10-12 minutes, or until al dente and the liquid is absorbed.
  4. Remove from heat and stir in the shredded cheese until melted and creamy.
  5. Dish out and garnish with fresh cilantro. Enjoy!

Notes

For best results, do not overcook the pasta. You can substitute ground beef with lentils or mushrooms for a vegan option.
