- 8 oz pasta (elbow or rotini)
- 1 lb ground beef
- 1 packet taco seasoning
- 1 bell pepper, diced
- 1 cup corn (fresh or frozen)
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
- Salt and pepper to taste
- 2 cups water or broth
Instructions
- In a large skillet over medium heat, add the ground beef. Brown it, draining any excess fat.
- Stir in the taco seasoning, diced bell pepper, corn, black beans, and 2 cups of water or broth. Bring to a boil.
- Add in the pasta, stirring to combine. Cover and simmer for 10-12 minutes, or until al dente and the liquid is absorbed.
- Remove from heat and stir in the shredded cheese until melted and creamy.
- Dish out and garnish with fresh cilantro. Enjoy!
Notes
For best results, do not overcook the pasta. You can substitute ground beef with lentils or mushrooms for a vegan option.
