Ingredients

  • 8 oz rotini pasta
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup sour cream
  • 1 cup corn (optional)
  • Chopped green onions (for garnish)

Instructions

  1. Cook the pasta by boiling a large pot of water and adding the rotini according to the package instructions. Drain and set aside once al dente.
  2. Brown the meat in a large skillet over medium heat until fully cooked, draining any excess fat if necessary.
  3. Mix in the taco seasoning and salsa, letting it simmer for about five minutes.
  4. Combine the drained rotini and corn (if using) into the skillet, folding everything together.
  5. Pour in the sour cream and stir until creamy and well mixed.
