- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup salsa
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup sour cream
- 1 cup corn (optional)
- Chopped green onions (for garnish)
Instructions
- Cook the pasta by boiling a large pot of water and adding the rotini according to the package instructions. Drain and set aside once al dente.
- Brown the meat in a large skillet over medium heat until fully cooked, draining any excess fat if necessary.
- Mix in the taco seasoning and salsa, letting it simmer for about five minutes.
- Combine the drained rotini and corn (if using) into the skillet, folding everything together.
- Pour in the sour cream and stir until creamy and well mixed.
- Sprinkle shredded cheese on top, cover, and reduce heat to allow the cheese to melt.
- Serve in bowls topped with chopped green onions and enjoy!
