  • 2 lbs. baby red potatoes, washed and quartered
  • 1 lb. smoked sausage, sliced into rounds
  • 1½ cups shredded cheddar cheese
  • 1 packet ranch seasoning mix (about 1 oz.)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 tablespoon fresh parsley (optional, for garnish)
  • ½ cup sour cream (optional, for serving)
  • ¼ cup sliced green onions (optional, for garnish)

Instructions

1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.

2. Place quartered potatoes in a mixing bowl, drizzle with olive oil, and season with garlic powder, paprika, ranch seasoning, and black pepper. Toss to coat.

3. Spread potatoes on baking sheet in a single layer. Roast for 25–30 minutes, shaking pan halfway through.

4. Remove from oven, add sliced sausage, and mix gently.

5. Sprinkle cheddar cheese over potatoes and sausage. Return to oven for 10–15 minutes, until cheese is melted and bubbly.

6. Remove from oven, garnish with parsley and green onions, and serve with sour cream if desired.
