- 1 pound ground beef
- 1 cup mushrooms, sliced
- 1 cup carrots, diced
- 1 cup rice
- 2 cups beef broth
- 4 ounces cream cheese
- 1/2 cup cream
- 1/2 cup parmesan cheese, grated
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Brown the ground beef in the Instant Pot over medium heat until fully cooked, breaking it into small pieces.
- Add the sliced mushrooms and diced carrots, cooking until softened (about 5 minutes).
- Stir in the rice, beef broth, garlic powder, onion powder, salt, and pepper.
- Secure the Instant Pot lid and set it to cook on high pressure for 10 minutes.
- Allow for a natural release of pressure for about 10 minutes.
- Open the lid and fold in the cream cheese and cream until melted and well combined.
- Sprinkle freshly grated parmesan cheese on top before serving.
Notes
For a lighter version, use low-fat cream cheese. You can also substitute ground beef with lentils or tempeh for a vegan option.
