Description

A comforting dish that combines tender ground beef, creamy cheeses, and wholesome rice, perfect for busy nights or gatherings.


Ingredients

  • 1 pound ground beef
  • 1 cup mushrooms, sliced
  • 1 cup carrots, diced
  • 1 cup rice
  • 2 cups beef broth
  • 4 ounces cream cheese
  • 1/2 cup cream
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in the Instant Pot over medium heat until fully cooked, breaking it into small pieces.
  2. Add the sliced mushrooms and diced carrots, cooking until softened (about 5 minutes).
  3. Stir in the rice, beef broth, garlic powder, onion powder, salt, and pepper.
  4. Secure the Instant Pot lid and set it to cook on high pressure for 10 minutes.
  5. Allow for a natural release of pressure for about 10 minutes.
  6. Open the lid and fold in the cream cheese and cream until melted and well combined.
  7. Sprinkle freshly grated parmesan cheese on top before serving.

Notes

For a lighter version, use low-fat cream cheese. You can also substitute ground beef with lentils or tempeh for a vegan option.
