Description

A comforting casserole layered with seasoned chicken, bell peppers, and a melty cheese blend, perfect for weeknight dinners.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 1 tablespoon olive oil
  • 1 packet fajita seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Optional: sliced jalapenos for extra heat

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray.
  2. Slice the chicken breasts into thin strips and season with salt, pepper, and half of the fajita seasoning mix.
  3. Heat olive oil over medium-high heat and sauté seasoned chicken until cooked through; set aside.
  4. Add sliced bell peppers, onions, and the remaining fajita seasoning mix to the skillet; sauté until tender-crisp.
  5. Combine cooked chicken, sautéed vegetables, sour cream, and half of the shredded cheeses in a large bowl.
  6. Transfer mixture to greased baking dish and top with remaining shredded cheeses.
  7. Bake in preheated oven for 20-25 minutes or until cheese is melted and bubbly.
  8. Let cool slightly before serving to allow casserole to set.

Notes

For a milder version, reduce the fajita seasoning by half. For a spicier kick, add diced chipotle pepper or use spicy pepper jack cheese.
