- 2 boneless, skinless chicken breasts
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 tablespoon olive oil
- 1 packet fajita seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
- Optional: sliced jalapenos for extra heat
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish with cooking spray.
- Slice the chicken breasts into thin strips and season with salt, pepper, and half of the fajita seasoning mix.
- Heat olive oil over medium-high heat and sauté seasoned chicken until cooked through; set aside.
- Add sliced bell peppers, onions, and the remaining fajita seasoning mix to the skillet; sauté until tender-crisp.
- Combine cooked chicken, sautéed vegetables, sour cream, and half of the shredded cheeses in a large bowl.
- Transfer mixture to greased baking dish and top with remaining shredded cheeses.
- Bake in preheated oven for 20-25 minutes or until cheese is melted and bubbly.
- Let cool slightly before serving to allow casserole to set.
Notes
For a milder version, reduce the fajita seasoning by half. For a spicier kick, add diced chipotle pepper or use spicy pepper jack cheese.
