Ingredients
- 2 cups fresh corn kernels (or frozen, thawed)
- 1 cup shredded sharp cheddar or mozzarella cheese
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- 1/4 cup finely chopped green onions
Instructions
1. If using fresh corn, slice it off the cob. Get all your ingredients ready before starting.
2. In a large bowl, whisk together the flour and baking powder.
3. In a separate bowl, beat the eggs, then stir in the corn, shredded cheese, and green onions.
4. Pour the wet mixture into the dry ingredients and stir gently until just combined. Don’t overmix—lumps are okay!
5. Heat a bit of oil in a skillet over medium heat. Drop spoonfuls of the batter into the hot pan. Flatten slightly and fry each side for about 3 minutes or until golden brown.
6. Remove the fritters and place them on paper towels to absorb excess oil. Serve warm with your favorite dip—think sour cream or spicy salsa!
