Description

Creamy Cheesy Chicken Broccoli Orzo made with tender chicken, fresh broccoli, and orzo pasta simmered in a cheesy sauce. A comforting one-skillet dinner ready in 30 minutes!


Ingredients

  • 1 Tablespoon Oil
  • 1 lb Chicken Breast (cut into bite-size pieces)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 Tablespoons Butter
  • 1/2 Onion (finely diced)
  • 4 Garlic Cloves (minced)
  • 1 1/2 cups Broccoli (cut into small pieces)
  • 1 cup Orzo Pasta
  • 3 cups Chicken Broth
  • 1 1/2 cups Cheese (1/2 cup parmesan, 1 cup cheddar)
  • 1 Tablespoon Fresh Lemon Juice
  • Fresh Herbs (basil, oregano, or parsley)

Instructions

1. Heat oil in a large skillet over medium-high heat. Cook chicken breast pieces with salt and pepper for about 3 minutes per side until no longer pink. Remove to a plate and cover.

2. In the same skillet, add butter, onion, and broccoli. Cook until softened, 5-7 minutes. Stir in garlic and cook 1 minute more.

3. Add orzo pasta, toss to coat, then stir in chicken broth. Bring to a simmer and cook 10-11 minutes until orzo is tender and broth is absorbed.

4. Stir in parmesan and cheddar cheese until melted. Return chicken with juices and stir to coat.

5. Remove from heat, add fresh lemon juice, taste for seasoning, and garnish with fresh herbs and extra parmesan.

Notes

Use a strong cheese like parmesan for nutty flavor. Combine with cheddar or Colby jack for creaminess. Stir orzo often to prevent sticking. Add a splash of broth if it dries out during reheating.
