Description

Creamy and cheesy comfort food that brings memories and warmth to every meal.

Ingredients

Scale
  • 4 medium Yukon Gold Potatoes, peeled and thinly sliced
  • 2 cups Sharp Cheddar Cheese, shredded
  • 2 cloves Garlic, minced
  • 2 cups Heavy Cream
  • 3 tablespoons Unsalted Butter, for sautéing
  • 2 tablespoons All-Purpose Flour
  • to taste Salt and Black Pepper
  • 1 cup Breadcrumbs
  • 1/2 cup Parmesan Cheese, grated
  • 1 tablespoon Fresh Thyme, optional, chopped

Instructions

  1. Preheat oven to 375°F and butter a 9×13 baking dish.
  2. Melt unsalted butter in a medium saucepan over medium heat, then add minced garlic and cook until fragrant, about 30 seconds.
  3. Stir in all-purpose flour and cook for 1 minute to make a roux, then slowly whisk in heavy cream until smooth.
  4. Continue cooking and whisking until the sauce thickens slightly, about 3 to 4 minutes.
  5. Remove the pan from heat and stir in 1 1/2 cups of shredded sharp cheddar, half the Parmesan, salt, and black pepper until melted.
  6. Arrange a single layer of thinly sliced Yukon Gold potatoes in the prepared dish, overlapping slightly.
  7. Pour a third of the cheese sauce over the potatoes so each slice is lightly coated.
  8. Repeat layering two more times, ending with sauce.
  9. Mix breadcrumbs with the remaining Parmesan and a pinch of pepper, then scatter evenly over the top layer.
  10. Add a few knobs of butter or a drizzle of olive oil for extra browning.
  11. Cover the dish loosely with foil and bake for 35 minutes.
  12. Remove the foil and bake another 20 minutes until top is golden and potatoes are tender when pierced with a knife.
  13. Let the casserole rest for 10 minutes before serving.

Notes

Use freshly grated cheese for the best melt and flavor. For a lighter version, substitute half-and-half for the heavy cream.
