- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix (such as Bisquick)
- 1 cup water
- Cooking spray (like Pam)
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups shredded cheddar cheese or fiesta blend, divided
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat your oven to 350°F.
- In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat.
- In a medium mixing bowl, combine the biscuit mix and water to create a dough and press it into a greased 9×13 casserole dish, baking for 5-8 minutes.
- Add chopped onions and red bell pepper to the skillet, cooking for about 4 minutes. Stir in taco seasoning.
- Spread the seasoned beef and veggies over the biscuit layer in the casserole dish.
- In another bowl, mix sour cream, mayonnaise, diced green chiles, ¾ cup of cheese, and garlic powder, then spread it over the beef layer.
- Top with spoonfuls of salsa and remaining cheese.
- Bake for about 30 minutes until heated through and cheese is bubbly and golden.
Notes
Customize the spice with jalapeños or spicier salsa. Add fresh cilantro or green onions as garnish.
