Ingredients

- 1 large onion, chopped
- 2 tablespoons fresh ginger, grated
- 1 tablespoon olive oil
- 1.5 lb carrots, cut into pieces (about 4 cups, 680g)
- Zest and juice of one orange
- 5 cups water or vegetable stock (about 1.2L)
- Salt and pepper to taste
Instructions
- Heat a large pan over medium heat. Add olive oil, chopped onions, and grated ginger, and sweat the onions until translucent, about 5 minutes.
- Stir in the carrot pieces and sauté with the onions and ginger for an additional 5 minutes.
- Add the orange zest and juice to the pan, pour in the boiling water or stock, and bring to a simmer.
- Cover and let the soup simmer gently for about 20 minutes, or until the carrots are tender.
- Blend the soup until smooth using an immersion blender or a traditional blender, then return it to the pot over low heat.
- Taste and season with salt and pepper as desired, then serve warm.
Notes
Chop vegetables ahead of time and store in the fridge. This soup freezes well for up to 3 months.
