Description

A warm and flavorful soup combining the sweetness of carrots, zesty orange, and the warmth of ginger, perfect for cozy evenings.


Ingredients

Scale
  • 1 large onion, chopped
  • 2 tablespoons fresh ginger, grated
  • 1 tablespoon olive oil
  • 1.5 lb carrots, cut into pieces (about 4 cups, 680g)
  • Zest and juice of one orange
  • 5 cups water or vegetable stock (about 1.2L)
  • Salt and pepper to taste

Instructions

  1. Heat a large pan over medium heat. Add olive oil, chopped onions, and grated ginger, and sweat the onions until translucent, about 5 minutes.
  2. Stir in the carrot pieces and sauté with the onions and ginger for an additional 5 minutes.
  3. Add the orange zest and juice to the pan, pour in the boiling water or stock, and bring to a simmer.
  4. Cover and let the soup simmer gently for about 20 minutes, or until the carrots are tender.
  5. Blend the soup until smooth using an immersion blender or a traditional blender, then return it to the pot over low heat.
  6. Taste and season with salt and pepper as desired, then serve warm.

Notes

Chop vegetables ahead of time and store in the fridge. This soup freezes well for up to 3 months.
