- 1 lb andouille sausage, sliced
- 4 medium potatoes, diced
- 1 cup chopped celery
- 1 cup diced bell pepper
- 1 cup chopped onion
- 2 tablespoons Cajun spice mix
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pot, heat sliced andouille sausage over medium heat until browned, about 5 minutes.
- Toss in diced potatoes, chopped celery, bell pepper, and onion. Sprinkle the Cajun spices and stir well to combine.
- Pour in the chicken broth and bring to a boil; reduce heat to a gentle simmer for about 15-20 minutes until potatoes are tender.
- Stir in heavy cream and shredded cheddar cheese until melted and blended.
- Taste and season with salt and pepper as needed.
- Ladle the soup into bowls and garnish with additional cheese or green onions if desired. Enjoy hot!
Notes
For a lighter version, substitute andouille sausage with smoked turkey sausage. For extra flavor, let the soup cool and refrigerate overnight before reheating.
