Description

A heartwarming Cajun potato soup filled with rich flavors, creamy textures, and smoky andouille sausage.


Ingredients

  • 1 lb andouille sausage, sliced
  • 4 medium potatoes, diced
  • 1 cup chopped celery
  • 1 cup diced bell pepper
  • 1 cup chopped onion
  • 2 tablespoons Cajun spice mix
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. In a large pot, heat sliced andouille sausage over medium heat until browned, about 5 minutes.
  2. Toss in diced potatoes, chopped celery, bell pepper, and onion. Sprinkle the Cajun spices and stir well to combine.
  3. Pour in the chicken broth and bring to a boil; reduce heat to a gentle simmer for about 15-20 minutes until potatoes are tender.
  4. Stir in heavy cream and shredded cheddar cheese until melted and blended.
  5. Taste and season with salt and pepper as needed.
  6. Ladle the soup into bowls and garnish with additional cheese or green onions if desired. Enjoy hot!

Notes
