- 2 chicken breasts, diced
- 8 oz pasta (your choice)
- 2 cups fresh tomatoes, diced
- 1 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese (for serving)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the diced chicken and season with salt and pepper; cook for about 6-8 minutes until golden brown.
- Add minced garlic and sauté for 1 minute until fragrant.
- Stir in the diced tomatoes and cook for 2-3 minutes.
- Boil water and cook the pasta according to the package instructions.
- Once the pasta is ready, drain and add it to the pan with the chicken and tomato mixture.
- Fold in the chopped fresh basil.
- Serve hot, topped with grated Parmesan cheese.
