Description

A heartwarming dish that combines chicken with vibrant toppings for a delicious and comforting meal.


Ingredients

  • 4 boneless, skinless chicken breasts (cut into large chunks)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
  • Salt & black pepper, to taste
  • 2 cups cherry tomatoes (or diced Roma tomatoes)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ½ cup fresh basil leaves, chopped
  • 1 tbsp balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. In a spacious bowl, combine the chicken chunks with olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss to ensure even seasoning.
  3. Heat a large skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown.
  4. Transfer the seared chicken to a baking dish, spreading it evenly.
  5. Top the chicken with cherry tomatoes and sprinkle the mozzarella and Parmesan cheese generously.
  6. Place the baking dish in the oven and bake for 20-25 minutes until the chicken is fully cooked and the cheese is melted and bubbly.
  7. Remove from oven and sprinkle with fresh basil. Drizzle with balsamic glaze, if desired.
  8. Serve hot alongside your choice of pasta, rice, or crusty bread.

Notes

Allow the bake to sit for a few minutes after removing from the oven to let the cheese set slightly.
