- 4 boneless, skinless chicken breasts (cut into large chunks)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp Italian seasoning (or a mix of basil, oregano, and thyme)
- Salt & black pepper, to taste
- 2 cups cherry tomatoes (or diced Roma tomatoes)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- ½ cup fresh basil leaves, chopped
- 1 tbsp balsamic glaze (optional, for drizzling)
Instructions
- Preheat your oven to 190°C (375°F).
- In a spacious bowl, combine the chicken chunks with olive oil, minced garlic, Italian seasoning, salt, and pepper. Toss to ensure even seasoning.
- Heat a large skillet over medium-high heat. Sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish, spreading it evenly.
- Top the chicken with cherry tomatoes and sprinkle the mozzarella and Parmesan cheese generously.
- Place the baking dish in the oven and bake for 20-25 minutes until the chicken is fully cooked and the cheese is melted and bubbly.
- Remove from oven and sprinkle with fresh basil. Drizzle with balsamic glaze, if desired.
- Serve hot alongside your choice of pasta, rice, or crusty bread.
Notes
Allow the bake to sit for a few minutes after removing from the oven to let the cheese set slightly.
