Instructions

  1. Preheat your oven to 350°F (175°C). Grease a Bundt pan generously.
  2. In a large mixing bowl, blend together the baby food carrots, brown sugar, granulated sugar, and vegetable oil until well combined.
  3. Crack in the eggs one at a time, mixing thoroughly after each addition.
  4. In a separate bowl, whisk the flour, baking powder, baking soda, cinnamon, and salt together. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  5. If using, gently fold in the chopped nuts.
  6. Pour the batter into the prepared Bundt pan and smooth out the top.
