Ingredients

  • 1 Cup unsalted butter (226 grams)
  • 1 Cup granulated white sugar (200 grams)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour (360 grams)

Instructions

  1. PREHEAT your oven to 350° F (180° C).
  2. In the bowl of your mixer, CREAM the unsalted butter and granulated sugar together until smooth, for at least 3 minutes.
  3. BEAT IN the extracts and egg until fully combined.
  4. In a separate bowl, COMBINE baking powder and salt with the all-purpose flour. Gradually add this mixture to the wet ingredients, blending just until combined.
  5. IMPORTANT NOTE: If the dough looks crumbly, keep mixing for 30 seconds to 1 minute longer.
  6. DO NOT CHILL THE DOUGH! Divide it into workable batches, roll out on a floured surface, and cut into desired shapes.
  7. BAKE at 350° F (180° C) for 6-8 minutes, or until the edges are lightly golden.
  8. LET COOL on the cookie sheet until they’re firm enough to transfer to a cooling rack.

Notes

For better control over salt levels, use unsalted butter. Consider using parchment paper for non-stick baking.
