- 1 Cup unsalted butter (226 grams)
- 1 Cup granulated white sugar (200 grams)
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 egg
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3 cups all-purpose flour (360 grams)
Instructions
- PREHEAT the oven to 350° F (175° C).
- In the bowl of your mixer, CREAM the unsalted butter and granulated sugar together until light and fluffy, about 3 minutes.
- BEAT in the vanilla extract, almond extract, and egg until well combined.
- In a separate bowl, COMBINE the baking powder and salt with the flour, then gradually add this mixture to the wet ingredients until just combined.
- If the dough looks crumbly, keep mixing for an additional 30 seconds to 1 minute until it pulls away from the sides of the bowl.
- If the dough still appears too dry, turn it out onto a lightly floured surface. Wet your hands and finish kneading the dough gently until smooth.
- DO NOT CHILL THE DOUGH. Divide it into 2-3 workable batches. ROLL OUT on a floured surface to about 1/4 inch thickness, and use a cookie cutter to shape the cookies.
- BAKE at 350° F for 6-8 minutes or until the edges are lightly golden. Let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
