Ingredients

  • 1 Cup granulated white sugar (200 grams)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour (360 grams)

Instructions

  1. PREHEAT the oven to 350° F (175° C).
  2. In the bowl of your mixer, CREAM the unsalted butter and granulated sugar together until light and fluffy, about 3 minutes.
  3. BEAT in the vanilla extract, almond extract, and egg until well combined.
  4. In a separate bowl, COMBINE the baking powder and salt with the flour, then gradually add this mixture to the wet ingredients until just combined.
  5. If the dough looks crumbly, keep mixing for an additional 30 seconds to 1 minute until it pulls away from the sides of the bowl.
  6. If the dough still appears too dry, turn it out onto a lightly floured surface. Wet your hands and finish kneading the dough gently until smooth.
  7. DO NOT CHILL THE DOUGH. Divide it into 2-3 workable batches. ROLL OUT on a floured surface to about 1/4 inch thickness, and use a cookie cutter to shape the cookies.
  8. BAKE at 350° F for 6-8 minutes or until the edges are lightly golden. Let cool on the sheet for a few minutes before transferring to a wire rack to cool completely.
