Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until they become translucent and fragrant, about 3-4 minutes.
- Toss in the chopped carrots and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer until the carrots are tender, approximately 20 minutes.
- With an immersion blender, carefully puree the soup until it reaches a silky-smooth consistency. If using a countertop blender, allow the soup to cool slightly before blending in batches.
- Stir in the heavy cream and season generously with salt and pepper. Taste and adjust as needed to achieve your preferred flavor.
